2000 vintage

An early spring heralded a year of mild but dull weather. The grey skies and rain were a permanent feature and from July onwards, the temperature dropped. In spite of that, the 2000 vintage proved to be as bountiful as those of 1998 and 1999 : this was the third successive year of superabundance. However, at 5 p.m on July 14th, a thunderstorm broke : large hailstones whipped up by a storm-force wind were followed by a hailstorm which completely shrouded the vines. On the eve of the harvest, morale was at its lowest ebb.
Today, some people speak of a miracle, since the sun reappeared in the middle of August and the harvest which commenced on September 15th under blue and sunny skies was a pleasant surprise to say the least ! A painstaking selection of the grapes immediately after picking, gave rise to a high-quality wine with a sugar content of 10.3° and 7.5g acidity. The little Pinot grapes of Aÿ, both robust and full-flavoured, had once more lived up to their reputation.

Composition
GRANDS NOIRS raised in oak from the Forest of Argonne, Champagne’s historic forest.
To the eye
A luminous and delicate blonde colour, crowned with creamy foam.

Nose
A mature and fine nose of beautiful complexity, with cooked pair and cherries, opening out to gourmet notes of yellow flowers, peaches, vanilla and white pepper and then warming to finely spiced perfumes of honey, hinting at a glowing future.

To the palate
This is dense, warm and winey, very well balanced, with lively effervescence and beautiful freshness. The tender texture and mellow tannins, added to the crisp, chalky impression of the finish, are typical of how it was raised and enliven a beautiful array of aromas.

Tasting & Serving
CODE NOIR is a brilliant and nuanced romantic, asserting its personality and always ready to seduce. Served at 8°C, it is a refreshing aperitif, while at 12°C, it will enhance quality poultry, veal or fish in cream sauce.

Composition
90% GRANDS NOIRS raised in oak from the Forest of Argonne, Champagne’s historic forest. 10% Aÿ red.

To the eye
This magnificent cuvee is crowned with fine white foam. A pink colour with coppery highlights, deep and delicious.

Noze
Red and black fruits against a slightly “smoky” background. Preserved cherries and raspberries set the tone, and then there is an aromatic explosion: pepper and cloves, touches of plum and an intense floral bouquet underlined by wine and a slight touch of wood.

To the palate
Flexible and fresh, the flavour opens up to a wine of textures, tender on the palate. This rich, balanced and harmonious cuvee is a fine example of purity. The long, chalky finish suggests substance and the fine flavour of Pinot Noir.

Tasting & serving
With its assured character CODE NOIR ROSE celebrates PINOT NOIR in a straightforward manner. It is a distillation of its origins and the champagne-making method. It is fully autonomous in its sense of harmony and purity. It should be served with tender, powerful and pure dishes to maintain all of its magic. A fillet of beef lightly cooked and without reducing to sauce, could do it justice. Serve from 8°C.

Celebration: Between the death of HENRI IV and the birth of DOM PERIGNON, FRANCOIS HEMART (1625-1705) firmly planted the roots of our family, GIRAUD-HEMART, in the territory and in the annals of Aÿ.

The power and fullness of the Coteaux d'Aÿ Matured as it breathes in small oak casks

Composition
70% Pinot Noir, 30% Chardonnay, harvested exclusively from the vineyards of Aÿ. Fermented in temperature-regulated vats and raised for six months in small oak casks.

To the eye
The deep, amber-tinted colour is a mark of its raising process. The fine and generous bubbles form an attractive and constantly renewed bubble trail.

Noze
A very fine nose with the elegance and freshness of honeysuckle, yellow fruit and green almonds with a pleasant dash of mint.

To the palate
Great elegance, round and delectable, savours of pair with yellow fruit and dried apricots, with finish featuring orange zest and chocolate. A subtle balance between the smooth meatiness of this wine and the chalky, fresh notes in its finish.

Tasting & serving
At 12°C, its power and strong personality open up a wide gastronomic choice ranging from bass in fennel to pork tenderloin in honey, or duck with citrus fruit and turnip conserve; or serve it at 8°C if you are raring to go – slightly chilled in the ice-bucket.
