Composition
Pure Chardonnay fermented in a thermo-regulated vat over whole lees.

Aspect
A fresh aspect, with a beautiful golden yellow colour, touched by light green highlights. Its fine bubbles dance a lively, joyous ballet.
The foam resembles a crystalline crown.

Nose
Preserved citrus fruits, fresh hazelnuts and, above all, the fine fragrances of spring flowers – acacia, mock orange and honeysuckle – offer a magnificent bouquet of great restraint and distinction. Then, its character expands, becoming riper and more exotic, revealing pineapple, lychee, roses and almonds, as well as toasted aromas.
A few minutes later, the terroir emerges, mineral hints of limestone and iodine.

To the palate
In the mouth, the initial impact is very fresh, frank and savoury, without a hint of “bite”, and this is accompanied by an uplifting and “crispy” effervescence. The finish is particularly distinct and mineral (limestone). It has great length, leaving a pleasant sensation that is both acidulous and chalky.

Service
Here, its aromatic finesse becomes delicacy and its rectitude becomes purity; added to this is the lively, exuberant and tender sparkle. A wine best served at 8°C, to drink on its own, with friends, for a festive occasion or to accompany a gastronomic moment. In this case, go for light dishes with fairly firm texture or dry dishes. Salt also poses few problems. This means you could consider grilled fish, shellfish, pastry-based dishes, dry cheeses (goat, parmesan), etc.

 
ESPRIT DE GIRAUD ROSÉ (Premier Cru)

Composition
70% Pinot Noir, 22% Chardonnay. Temperature regulated vinification in vats on the lees. 8% wood-raised Aÿ red.

Aspect
A highly appetising strawberry colour, with orange highlights giving substance to this beautiful fabric. The fine, lively bubbles release a handsome bubble trail with a pretty pink touch.

Nose
An intense, spirited nose, with crushed strawberry and biscuit dominating a background of spices and grenadine juice. This opens to rich flower aromas, roses and peonies, then aniseed, oak and undergrowth, revealing the ageing and maturing process.

To the palate
Initially crisp and quite fresh, almost supple, with delicate effervescence; then the body follows. The blend is rich and mellow, with an agreeable hint of acidity. The finish, smooth, fluid and crisp, prolongs the fine roundness of the wine in a pleasurable manner...

Composition
70% Pinot Noir 30% Chardonnay. Temperature regulated fermentation in stainless steel vats for a year without racking, over the full lees.

Aspect
A fine golden colour with the blonde highlights typical of Pinot Noir wines that have reached maturity.

Nose
Touches of peach and pair, vanilla and spices (white pepper) against a background of lemon preserve, which gives it a certain freshness. Then comes its maturity and heartiness…

To the palate
The initial crispness quickly gives way as the overall wine flavour opens out. Its body, consistence and even fullness give the wine its structure. The mineral notes and light tannins contribute to a long, winey, and warm finish with a silky harshness over aromas of bitter almonds and biscuit.

Service
A wine of character, full of mischief and spirit. Gushing, generous and unselfconscious, it has a seductive personality. Drink with friends for pleasure and discovery in a simple and friendly approach, for a festive occasion or simply to relax, or serve in a gastronomic setting with rich starters, veal liver, juicy white meat or hard cheese.
